Hi,

I want to be able to run SME Server 7 (www.smeserver.org) as a VPS, is this possible? SME is based on CentOS and there are templates of CentOS already so SME should? be ok?

However I have no idea how to custom create a template, how would be the best way to get a VE of SME 7 from an ISO or CD?

wiki.openvz.org contents a lot of articles on OS Template creation. You can get the idea of creating OS Template from there.
