Suppose I want VE 100 to service port 53 while VE 101 services port 25 on the same IP address. Can I do that? If so - how?

You can do it by means of iptables REDIRECT module in HN. Assign one IP1 to VE1, another one IP2 to VE2 and required IP to HN itself as alias, then configure iptables to redirect specific ports to IP1 and IP2.
