I have a host machine with 2 NIC's, one connected to the public (internet) and one connected to a private (lan).

Is it possible to create a virtual network between some of the VPS on a server ?

Is it possible to have several of these virtual networks?

And finally, how do I do ?

If I understand you right, then it is surely doable:

1. via routing and venet network devices you can setup appropriate routing rules in VE0. Take a look at this also http://wiki.openvz.org/Source_based_routing

2. Or via veth network devices and bridges. Using veth it is possible to create more looking like a real-life configurations via bridges. Search for veth, vznetcfg etc. on forum and wiki:
