OK, so when I finally made the udev/vzdev connection I did yet another Google search, and came up with 1 single relevant hit: http://forum.openvz.org/index.php?t=msg&goto=3722&

So I found the vzdev rpm, copied it into the vz private area, and did:

[root@pumba morten]# vzctl exec 101 rpm -e --nodeps udev
[root@pumba morten]# vzctl exec 101 rpm -i /root/vzdev*
[root@pumba morten]# vzctl enter 101
entered into VPS 101
--bash-3.00# ls /dev |wc -l
532
-bash-3.00#
