I'm pretty sure you will need to install Debian AMD64 on the hardware node with a linux-image-2.6.26-2-openvz-amd64 kernel in order to run a CentOS 5 64 guest.

May I suggest you this "Bare-metal" installer:
http://pve.proxmox.com/wiki/Bare-metal_ISO_Installer

Try it and you will be amazed. You can configure almost everything from the webinterface even download templates. This was how I started using OpenVZ technology one year ago.
