The think I like most about OpenVZ is its lightweight. On a PIII 1.2 with 1.7 GB RAM, I run 11 smal Virtual Environment, and the total or RAM used for all the VE is 638 MB.
Also, you should be using LVM if you want to be able to resize your /vz partition. You can also move your /vz to another partition if needed. You could even run one VE in /vz1 and another in /vz2 (but it is less easy to manage).
BTW, openvz is not making your hard drive. OpenVZ behaves like a regular linux host, so you can use all the usuall tools, mdadm, lvm, resize2fs, ext2online, etc.
About VNC? Yes, there is a way to run something like that, but I never did myself, I never install anything graphical on my servers.
