Вы могли бы порекомендовать какой-нибудь профайлер, который мог бы работать с приложениями, запущенными в vps'ах?
(cpu,mem,etc)

Ответ конечно не очень содержательный, но выскажу мнение, что:

1. если profiler не ядерный (в gcc например есть такой), то он будет работать и в VE (ну типа того, сколько раз позвали функцию).

2. Ежели Вы имеете ввиду типа kernel oprofile, то он собирает всю статистику и сделать ее per-VE возможно и можно, но уже требует массу усилий.
