Here said that OpenVZ has a kind of overlay ( or cow) FS which is called
"VSFS", although I have not found documentations about it.

Could you tell me any informationo about this FS?
Even just URLs to docs would be welcome.

Sorry, it is VZFS. I know Virtuozzo has one, but OpenVZ has it?
Or I should use UnionFS (or CoW link) as an alternative?

For now, you need to stick with UnionFS...
