None that I know of. But I'll be creating one for a client this afternoon (CentOS5). We can compare notes if you like.

It's 32bit or 64bit template? Could you post the template in openvz download section?
LAMP+Tomcat will be good.

I'm look for a Tomcat LAMP template as well, and before I try and create one, what would you say is a minum recommended value for the RAM & CPU?

For template it doesnt matter CPU or RAM. You can put any.

I know the template can have any settings, I'm actually looking for recommendations for a Tomcat VPS

I have used Cpanel Tomcat + openvz. It works fine with 512mb but Tomcat need restart after week or so for better performance 1gb ram atleast and fully brustable CPU. But all depends on application load.
