I'm a newbie at Virtualization and need a bit of information to fully consider the options we are considering for an internal server virtualization project. On one side, we could use the Virtualization component of CentOS 5.1 itself, or we could use centOS 5.1 but use OpenVZ ofr virtualization. My question is, what are the major differences (if any) between the two options.

"CentOS virtualization" should be Xen. For Xen vs. OpenVZ comparison, see this report from HP labs (short summary here).
