Can someone point me in the right direction? What filesystem should the host system preferably have for CentOS? I usually use ext3, but should the host have ext3 and the VPS have ext2?

Wheeeeeeeeeee.

In other words, is simfs the best fs for a VPS? Smile Should I keep ext3 for the hardware node?

Use ext3 for the host system (for /vz partition as well).

simfs is just a simple "virtual" filesystem to be used for VPSs. simfs runs on top of any other real filesystem.
