I'm running RHEL4u4 x64

So now I see there's...

"Stable" kernel 2.6.9-023stab040.1 (what I'm currently running)
"Development" kernel 2.6.18-ovz028stab023.1 (but it's also tagged "stab"... does that mean it's actually stable?)
"RHEL5" kernel 2.6.18-8.el5.028stab023.1 (it's also tagged stable?)

What kernel is it recommended that I use?

2.6.9 has some weird crash errors that I haven't been able to isolate (or get a proper dump of) yet relating to cifs and forcedirectio (I believe loading the module, mounting something, umounting it, then unloading the module from VE0 will cause it to crash)

I think you should use 2.6.18-8.el5.028stab023.1 kernel. It is new stable branch (2.6.9 is obsoleted) will be long supported.
