How can I get a different kernel running in the VE than that which runs on the hardware node? I'd like to use OpenVZ for kernel mode development and need to be able to do this for this to be a realistic solution.

OpenVZ doesn't allow you to, the kernel is the same for both the node and the VE's...the kernel memory is shared so it is a good thing for some. If you need different kernels look into Xen maybe.
